(I had pre-ordered the Asian Veg but changed to the sea bass a day before departure but the Asian Veg got catered anyway so I got to try both.)

I'm thinking about the Asian Veg for this one too but I'm having that on my connecting flight from DFW. Otherwise I may go with the top chicken dish or the grain bowl with salmon. Still have a few hours to choose.
Was on PHL-AMS last Friday and have to admit I was quite impressed. It was the best service, food, and even wine I've had on AA in quite some time. I went with the beef, which was tender and cooked medium. My wife enjoyed the seabass, which was moist and flaky, not rubbery as I'm used to. I was surprised to see they were pouring cabernet from Imagery Cellers, a pretty decent mid-sized vintner in Sonoma (who contracts with a friend of ours to display her art in the tasting room). Sure, they were pouring their 2016 which you can get for $14 at Bevmo, but it's not a bad wine at all, and worked well at 35,000 feet. The service on the flight (as well as my DFW-PHL connector) was genuinely friendly and attentive. Far better than I've had in FF over the last year or so on transcon routes, and better than my last international flights in J DFW-LHR.

Finally, it was my first international trip in the Concept D seats. We chose row 1 middle seats in case we got this layout, and sure enough we did. It was totally fine as the seats do not connect to any others, and I found the bed to be very comfortable with tons of room for my feet, which is my primary complaint in most cabins. I slept very well for 5 hours and would not be too disappointed to fly this cabin again if in seats that are not connected to others.
