Correct, no QF F that night if your flight the next day is at 7am. But if it's at 5am (what you mentioned above) then you should be good.
The whole point of the "before 6am" rule is to provide lounge access the calendar day before in instances where you may have a very late evening (really earning morning) departure. So if you are departing LAX at say 1am flying LAX-HKG it's of course no problem to use the lounge at 11pm the calendar day before.
