I am thinking of either going with no seat selection or ACDF and hope no one seats on B and E. Do they assign people in middle seats?

Flight cost on AirAsia is $75, which according to Capital One travel website includes 20kg bag. I am not too sure about this, as AirAsia website shows check bags to be additional. Thai Airways is $153, which I know includes 20kg bag. Should I take a chance on Thai AirAsia and hope Capital One is right that it includes bag fees or go with Thai AirAsia?
Frankly, with a family I’d never contemplate not paying a small fee for seat select. If you don’t pay to select a seat I suspect Air Asia will seat you randomly.

Why not just make a dummy booking direct with AirAsia to see about what is included. OTA you mention may have it wrong, or may be quoting a fare bundle including bags. If thing go wrong you have to deal with the OTA - that can be problematic.

Personally, I’d book direct with either AirAsia or THAI ( or any other carrier) based on schedule and cost that meets your travel aims.
