Not quite sure how they do the training for F, but surely there are some visual memory clues that people embed as part of their training?
So I would test them by showing a layout (in an accurate cabin mock up, not using photos) and add, takeaway and move items around until the trainees had a clear picture in their heads of what each stage of the service has to look like. We all learn differently, auditory, visual and kinaesthetic, but for most people visual is a very strong learning style.
It is also why the top restaurants mentioned earlier get it right. The staff are very good at looking at a table and seeing what needs doing.
