I like the idea of starting in Kyoto to help facilitate early morning wake-ups (it’s genuinely wild how empty some of the top tourist sites are in the morning!).

Only other suggestion to add is to ride Gran Class if you have a Hokuriku Shinkansen leg from TYO to Kanazawa. What a splendid way to travel, and at a fair tariff.
