I can’t speak for AS examples specifically here, but most airlines would need to reticket the itinerary, which means the availability would need to be there after the existing ticketed itinerary is cancelled. That’s risky, it’s one of those cases where the end result is exactly the same either way, but the airline process to reach the result is rife with procedural obstacles.
It is a reissued ticket, but that doesn't mean that the underlying reserved segments need to be canceled. It only matters if there is married segment logic on the routing, which wouldn't be the case with a stopover, only a thru routing.
