2-3 hours even without luggage? That's going to make it quite a long journey but I have forgotten to factor in passport control so best to be safe than sorry I guess...

Sounds like you're asking about a Schengen to non-Schengen flight. In the T2-T1 example, you'll disembark into departures, and walk (could be a long walk) all the way to A/B gates. No security, but you'll need to pass passport control, which depending on time of day, can have excruciatingly long queues for non-EU passports.
Yes, Schengen to non-Schengen (Canaries to MAD to UK) so passport control does come into play with a now non-EU passport to make things even more miserable.
Depending on which airline I take on the first leg I would arrive in T1 (only Ryanair), T2 (Air Europa & Binter) or T4 (Iberia).
From MAD it's then most probably T1 to the UK unless I'm lucky enough to catch a flight on Iberia in which case it would be T4S.
Would the smart move be to plan both legs according to the terminals? So when flying into T1 or T2... connect to a flight from T1. And likewise, when flying into T4 go for the connection from T4S?
On a side note, on journeys where I just need to switch planes, are MAD and BCN going to be similar or is one clearly easier to transfer through?
