The light in galley thing sounds nice in principle, but might not be sufficient to capture the attention of someone who is deeply engaged with his/her cell phone.

Until I was about 25, my metabolism was still extremely high. As such, I was frequently hungry/thirsty, even on airplanes. I usually went to the galley myself to ask for snack items or drinks on long flights, but on more than one occasion there was a sleeping human between myself and the aisle so I used the call button instead (i.e. better to inconvenience the service professionals than than those who are paying for the service). I don't recall the ding sound being especially offensive.
