I'm pretty sure both flights will be operated by NW, and I assume you're flying coach.
I've never been able to figure out the difference between spicy asian vegatarian and hindu. I think they serve you the same thing regardless of which you order--or at least my "spicy asian veggie" requests have always resulted in an Indian-style cuisine (if it can be called cuisine

). I don't think I've ever ordered Hindu.
I usually order lacto-ovo vegetarian. And I often end up getting vegan (non-dairy) meals. I don't really care as long as I get something non-meat. But be warned that ordering lacto-ovo doesn't mean you're going to get milk and eggs. It just means you might get milk and eggs (whereas ordering a non-dairy meal means you'll get something vegan).
To see examples of meals, look at
http://airlinemeals.net
It doesn't have everything, but it has some.
Click on special meals, then look for photos of veggie meals on both NW and KL (since I think KL will cater the NW-operated AMS-BOM flights).
I'm going to try to remember to add my meals to airlinemeals.net from my int'l flights next month. I always seem to forget.
