I have been in this situation a couple of times as I prefer a vegetarian meal. An AVML dessert is loaded which is usually a small fruit plate, but usually it was not a problem to opt for the regular dessert and was also offered cheese (however declined as I don't eat cheese). Bear in mind however that crew will give priority to other passengers - especially on a full flight.
