The description on my menu (ex-DTW, so possibly different catering) has Manchego, Cheddar, and Swiss for the cheeses. It's not Swiss (arguably not a real cheese anyway, though I suppose "Emmental style" is unworkable); on mobile I don't have the best view but it looks like a New York/Vermont white cheddar (e.g. Cabot).
(My preferred pairing with Cabot (the sharper the better) is (or was pre-distillation) beer, but I see a few recommendations to pair Cabernet Sauvignon with sharp cheddar)
Today, I got some store brand Vermont white cheddar. This was the cheese. Very good. Will try Cabot brand next. I still can't believe Delta carries Jordan cabernet sauvignon on a domestic route. Fantastic!
