You can take the Central line or Elizabeth line to East London rather easily (or Elizabeth line to Central London) - though, obviously, that adds time to journeys beyond being able to walk out the door and be in London. There should be a significant price difference between this and other London properties. Maybe not with Hyatt Place London City - but I haven’t stayed there.
Only the Great Scotland Yard and HR Churchill are what tourists would consider "walk out the door and be in London". Every other Hyatt hotel requires transport to the places tourists tend to visit. (except for those who like to walk miles and miles)
FWIW I always stay at Stratford precisely because of the transport links and decent prices.
