I’ve flown SFO-MAD in C a couple of times, including once in the center section of row 1.
First, I found the service and seat to be very good. I traveled with my dog and husband, so the center section of row 1 was ideal for us, but there is no additional leg room that I can recall.
If I were traveling solo, I would prefer an even numbered row in a window, as these seats are the most private in the cabin. Choose a seat toward the front if you care about getting your first choice for main course.
For what it’s worth, there are plenty of cavas I’d prefer to some champagnes. The cavas Iberia serve in C are perfectly acceptable, IMO, though they also offer a good selection of sherry, if I recall correctly.
