You will go through security at DXB again. However, you can still buy booze at LGW. Once you pay there, let them know that you transfer in Dubai and that DXB is not your final destination, then your booze will go into a plastic, see-through and temper-proofed sealed bag. This bag will then be simply scanned together with your other hand luggage at DXB transfer security. That's it.

You can also additionally buy wine and beer etc. at DXB, the cheapest wine bottle starts at about GBP17.

Of course you will need to check customs allowances for HKT. Enjoy your trip.
