if the old snack meal was offered on these longer “short” flights I doubt anyone would say anything. Just use the leftovers from a club.
That would be a health code violation. Anything that has been put out in the buffet cannot be re-served.

And since club offerings are catered by a different company than the one provides onboard food, somehow this is also unlikely.
