As in is it possible, yes I believe that is. Reward booking are flexible up until 24hr from departures. Changes are subject to the change fee per person though on top of avios seats available. I don't think in your case an outward leg would be added without paying the change fee. I might be wrong though, others might know best. But my hunch is that this will be just processed as an effective change in the ticket from one-way to the new itinerary (the voucher will still be applied to the new leg as well though) . I don't think this falls under the exception of "return not bookable because outside the t-355 availability window". Taxes will also be recalculated.
