Both properties are very solid, especially on Gold floor. These two properties are less than 5 min walk apart from each other and both have good access to Skytrain stations, so they aren't that different location wise.
My preference is Hotel Vancouver because I like the building and its history. Though if you prefer the view of Vancouver Harbour and the mountains on the north, go for Waterfront.
My experience with elite status treatment in Canadian Fairmont hotels is that don't expect anything more than drink vouchers, but if you stay enough that the staff know you, you may be surprised with some pretty generous upgrades, welcome amenities, and much more personalized service.
Thank you for your insight! I appreciate it. It may be worth to split the stay up a bit just to get the experience of both. I love storied hotels as well!
