I don't think you're going to find much from people in your situation. People are happy to shop where they are wanted.
No hole in the story.
The OP chose not to share how many thousands of dollars of gift cards he purchased on a regular basis. People buy Fuji apples, chicken and water to eat and drink. People like the OP purchase gift cards as a way to generate significant amounts of credit card charges, which produce benefits. The actual gift cards might be sold or used to buy other git cards.
Gift cards are sometimes purchased with stolen credit cards then used or sold. Probably not worth the effort to separate illegal use with use which far exceeds the intent of gift cards.
The transaction was computer blocked at the self service check out. I doubt this was done on the store level.
What business is it of Walmart or any company why GC are purchased? What business is it of Walmart why fuji apples or chicken are being purchased. There is most definitely something not being disclosed. Unless WM has a disclosure notice at point of interaction stating a consumer can only purchase a certain number of GC then it cannot stop a consumer from making such a purchase. It certainly does not care why they are being purchased.
Something is missing from the OP's story.
