I'd make my mind up on arrival. If the Alilaguna's there, take that one. If not, get the No. 5 bus; for instance, there's a bus at 00.10 (arrival in Venezia piazza Roma 00.34), 00.40, 01.10 and so on. You can buy a ticket with the ACTV app.
