What seating arrangement would you recommend for 2 kids who'll likely need a lot of assistance? Bonus question, will I be able to share a seat with my toddler once it's in layflat/naptime mode?

I was thinking something like below in the middle row, that way each kid as an adult next to them but also an adult on their side of the aisle:
