There was plenty of difficult weather at AMS on Monday 15th. ATC restricted the traffic flow so some flights got cancelled, others operated. I don't think you have a case for delay compensation.

It is generally better to call up (or visit a customer service desk at the airport) and ask to be re-routed on a different airline rather than going ahead and booking it yourself immediately. You can ask for the price of your original ticket to be refunded (in part, for the unflown segments), but may well be unsuccessful in getting anything more than that.

You should be able to get your hotel cost refunded through the duty of care obligation.
