I've been to Hong Kong a few times and have been to a number of business dinners at fine dining restaurants (Shang Palace, Mandarin Grill, various sushi places).

Going back this winter for leisure with my partner (his first time in HK) and looking for the absolute best fine dining experience in HK for Chinese. We are based in NYC so have plenty of western options and not really interested in those. Not really interested in sushi either since we often go to Japan.

Has anyone been to both T'ang Court and Forum (both 3 Michelin stars) and can recommend one or the other? We definitely would like to do one of the 2. How about 2 star/1 star places that are a bit more innovative? Looking forward to hearing this group's advice.
