Did you consider simply asking a server or chef for what you wanted? Spent a week in Taipei at The Regent and I asked the chef at the hot grill to prepare the eggs I wanted. Not criticizing just asking. I've never found a hotel restaurant worker in Taiwan to be anything but accommodating.
