The good thing with your DOH - MNL - HKG return leg is that Qatar and Cathay Pacific use the same Terminal in Manila (Terminal 3), which is way more convenient than having to transfer terminals.
That's true. You must find a staff to assist you as the transit pathway needs airport documents to pass through (provided by the airport staff).
And there is no CX transit desk at the airport. I did QR928, and the next day, on a CX flight back to HK, there were QR ground staff at MNL's gate and asked me if I wished to enter the Philippines or wait at the airside. I strongly recommend you book a cheap hotel which connects to MNL T3 by bridge. Airside overnight might be a nightmare.
