Is there any chance you can change your tickets? Air France also flies to Greece, so if you had an AF ticket from YUL to ATH you wouldn't need to do anything upon arrival at CDG other than using the lounge (if you're entitled) and getting yourselves over to the next gate on time.
3 hours to clear immigration, collect luggage, clear customs, and schlepp yourself over to another terminal is going to be very challenging.
