Sorry to hear about your delay - you can find how Qantas restricts it obligations here. Their generosity is highlighted by this statement "we will re-book you on the next available Qantas flight which is acceptable to you, without charge"
These obligations do not limit your options under local law. Yes hotel, transfers, meals are all covered up to a limit. If there are multiple people you may want to have multiple hotel rooms under the different names.

There is no need to wait for QF, the form is done online with receipts. I have not heard them of paying above these amounts..

The complexity is that HNL-SEA is on another carrier so you may be better off discussing standby options with the other carrier - as the flight will be under airport control of that carrier. Just say you were rebooked and is there an earlier flight - do not confuse the airport agent with QF tickets, compensations etc...
If there are other options with other carriers then QF may rebook you, or your TA could? But you will need to speak to them.
