Nothing beats local knowledge! Last year we went to a nondescript sushi restaurant in Sapporo and had the most incredible sushi served by a fourth-generation owner. Our local guide knew the place and got us seated at the counter with service by the owner.

Earlier in this thread I was accused of "bragging" about the "private" places for the best Sushi -- trust me in Tokyo especially the best places want nothing to do with Michelin stars -- they have regular clientele that they trust to show up and serve the most amazing food that honestly most people would never know... We head home to Tokyo tomorrow -- if you need any other recommendations feel free to DM any time....
