The cheapest fares have a 180 day advance purchase requirement - which you're well short of. They also require a mid week departure.

Departing on the 19th May and flying to LAX instead of LAS you can do DUB-LHR-LAX, then coming back SFO-LHR-MAD is £1.5k. Drop the departure back to the 16th and it's £1380. However you're unlikely to be able to route these via JFK without increasing the price significantly.
