I've tried calling AA to add, and I've either been told they can't find the availability on that flight (when I can see it on AA's website for 30k points) or that they have to cancel the jfk segment. I also tried putting a hold on the bkk-hnd flight as well and tried having them add that to my hnd-jfk flight so it prices at 70k, but I've been told that's not possible.

The latter proved to be quite easy, but they told me that the only way to add another JL segment on the front end was to cancel and start over. Since BKK-HND costs much more than $160 if you want a nonstop, you might want to press on a little harder. I suspect you're running into these difficulties because JL uses married segment logic/availability for awards. If BKK-HND-JFK or SHA-HND-ORD isn't available as one through award, then you might keep HUCAing to see if you'll find an agent who is willing to override the married segment logic and build the award entirely segment by segment, but I wouldn't get my hopes up.
