I keep an eye on Centroamerica fares, and hop on them when they drop.

TACA Airlines has had an Xmas / New Year sale for the past three years, and for some reason CO matched it this year.

Normal IAH-SAP and IAH-TGU fares run about $550 all in. I'm somewhat surprised that it's that much higher from SLC, because CO tends to have LOWER prices from flights originating at airports that connect via IAH, those so called hidden cities.

I'd just keep an eye on the fares, because I'm convinced that they cannont go any higher (famous last words), and expect that on these not very popular routes they will come to a more reasonable prices. BTW, if you have time, you can add SAL to the mix, there's excellent luxury bus service between San Salvador, Tegucigalpa and San Pedro Sula.
