A simple version of a Panamanian Christmas Eve dinner. From top left: raisin rice, roast pork, ham, potato salad with apples. I was feeling ever so slightly hungry and I reheated so I could post this here. In hindsight this was a lot of carbs and pork to eat so late at night. Missing are the sweet plantains and egg bread wreath we had earlier. Other elements, like turkey and tamales, are missing. But my family was determined to learn to make the egg bread so the menu was lean.
