I think the difference is fairly small. You mention EWR is more crowded. That is true, wait for the dining room can sometimes get up to an hour but for your flight time it shouldn't be too bad. IAD, I've never had to wait. At the EWR dining room, the service time is highly variable. The time to wait for a server to take your order or the time to get your food after ordering can range from a few minutes to over half an hour sometimes regardless of how busy it is.

If the flight is short enough, sometimes you get offered more food (snack box) than in F (snack basket or nothing). Whether it is better is subjective.
Bulkhead/exit seat pitch can be better than in F. 767 might be a different story
