I've wondered about this. Maybe (and this would be a stretch for AA) it is for product consistency. I'm not sure on many CRJ flights they even stock a liquor kit, and most I've been on lately blocked at 75 minutes or less gate to gate don't even have a full beverage service. One could hope they did this to not sell a service they won't offer.
