You can buy wine at LHR duty free and you must tell them that DXB is not your final destination when they scan your boarding pass, then they will put your booze into a plastic/ security sealed bag (which you won't tamper with of course) with your receipt inside and you will be fine in DXB at transfer security. You have plenty of time to do some additional shopping at DXB, I remember the cheapest bottles of wine start around the GBP 15-17 mark.
Why don't you buy a few bottles in your local Waitrose/ Tesco etc. and put them in your checked luggage...
Generally a good idea to bring wine to Bali, I find wine there very expensive (Bintang is cheap though).

Fortunately with the 30Kg baggage allowance on Emirates, its a good idea as you'd recommended. I intended to travel out lighter so I had spare allowance for the return from Bangkok and a bit of shopping. No harm on loading up with booze that wont be coming back eh!
