I wasnt sure if it was just a January to March thing and maybe the new planes then switch to more Europe routes or if its just a matter of the schedule not being loaded that far but in fact the 321 Neo would stay on this route for a couple flighs a day how its showing it will be in Jan & Feb.

It's actually the other way around. JetBlue currently has some A321NEO planes flying to Europe with the new Mint seats that were meant to be used for transcon routes, such as LAX-JFK, due to delays in delivery of the A321NEO LR that were meant to be used for transatlantic. If you're seeing them arrive on transcon routes, that likely means that they've been replaced on their transatlantic route with a new A321NEO LR jet. Chances are they'll stick around unless they're short a jet on the TATL route. JetBlue does move jets around among routes so it doesn't meant that those planes will stay on the LAX-JFK route. They could be rotated onto BOS-SFO, FLL-LAX, or back to TATL (if they're short equipment again) and replaced with one of the older A321CEO planes with the old Mint cabins. I've had the experience of jets being switched a few days before flying as well, luckily from CEO to NEO for my first ever ride in the new cabin (along with the flight attendants').
