I think a lot depends on how you intend to spend your days. If it's hopping around from place to place to see famous landmarks then all the main places are obvious and the weather will be your only concern.

The Canary Islands are your best bet in terms of sun and warm weather, plus they are part of Spain (and henceforth the EU) so you know you're in a good place. Southern Tenerife should be nice, you could rent a car and check out the Teide volcano, do a full circle around the entire island in a day, etc. One of the best waterparks in the world is located there (Siam Park) though you'd have to google it to see how it compares to the ones you have back home.

You could even do a trip there coupled with a 1-week cruise that would give you the best chance to visit all the main islands in the area as they are all quite different (the Star Wars movie 'Solo' was filmed on one of them). Of course you can visit several islands by taking short flights between them or taking the car on a ferry, but a cruise is more convenient as your hotel moves with you so to speak.
