I tried one other option which was the roundtrip with an Abu Dhabi stopover. I had needed to make a stop on the return so realized it might work using the roundtrip option as the starting point. Then I just specified the number of stopover days on the return.
This somehow worked and was able to book and pay for it. Still seems like there is an issue with the multi-city booking.
