Sanitizing the aircraft's potable water system is part of the aircraft's maintenance program. It can no more be skipped than any of the other required maintenance items.

The coffee pots are exchanged frequently as part of the catering service.

If this were a problem, you'd think there'd be outbreaks, particularly among the crewmembers who drink airplane coffee regularly. I've never heard of one.
