If so, one option is to book eg EDI-LHR before voucher expiry, then stopover until October and go to JFK then. You actually need to have the Edinburgh weekend break as you need to fly EDI-LHR.

BA got wise to this years ago and eliminated this loophole. All outbound travel must occur before voucher expiry.
From the terms and conditions:
25. Outbound travel must take place before the expiry date of the Companion Voucher however inbound travel can take place after the expiry date of the Companion Voucher, provided it is booked at the same time as the outbound travel.
