This is a tricky one since it's a same plane through flight and you want to hop off midway through.
IF you can get off the plane then there's really no consequences to worry about as a one time occurance.
Of course the QR ground staff at HKT will be looking for you but will give up after a while. I no-showed on a QR flight several years back after checking in, the gate agent at DOH called both my cell phone as well as my emergency contact number which was my father back in the US. He was certainly curious as to why he was getting a call from Qatar at 4am EST.
I say IF you can get off, as sometimes on these type of flights they do checks on the jetbridge to make sure only those who are supposed to get off, get off. YMMV.
