Data/speeds are decent and there is good coverage all over Phuket/Khao Lak. AIS, True, DTAC are the major providers and all fairly similar.

I regularly stream Netflix, Youtube, etc without issues on data (5G). Just be aware that data gets consumed very rapidly but top-ups are easy and inexpensive.
