My gut tells me that UA does not have enough catering BUDGET per meal to care about meal quality/quantity, let alone forgotten sauces!
Along with food budget, there is also the FA cut that happened a while ago. It seems like a number of instances is due to not having enough people to properly prepare and serve the food so you end up with the all in one service, or the meals not assembled correctly.
