Marriott got back to me on my IT ticket on this issue of missing properties.
Workaround is to go to the public library for phone books of exotic places like New Orleans or New Caledonia on microfiche.
Look up the name of the property you want - as it was badged in the year of the phonebook the library has.
Write down your Bonvoy number on a piece of paper and make sure you bring it with you.
Then call the property to negotiate rates - during business hours, but not 11-1 or 2-4 - and book the property.
You can call from the street outside the library or when you get home, but not inside because it's a library.
Once you've booked on the phone, the agent will populate the reservation into your Bonvoy account My Trips.
Problem solved.

It did work for me (the one hotel that was missing popped back up) but isn't working for many others. So weird Marriott thinks everyone here are noobs. If this many people are reporting a problem, it isn't as easy as a cache issue.
Properties should sue Marriott for lost revenue.
Customers should do the same for limiting their booking choices.
