"champagne sabering"
Brings back memory of the Pearl Harbour movie scene where
Ben Affleck was popping a bottle of champagne outside the hospital.
Yeah, it's often described oddly as the "evening ritual" or "evening moment" or "ritual moment" - some properties do it daily, others only on certain days. Interestingly, some properties do have an expanded take - I've seen this at St. Regis Macao, where they did have an evening cocktail and canape hour with the hotel manager after the champagne ceremony. I had a nice 1:1 conversation with the manager for about an hour - very interesting and philosophical!
