I often hit the button in F. I occasionally hit in J. I've never pressed it in PY or Y. My expectations for service differ between cabins.
But I always expect it to be answered if I press it. And I've had similar experiences to the OP in AC J (though not "Signature Class", but I think that was just luck more than anything else).
My point was that as an economy passenger paying a small fraction of the business class price for transportation to the same destination, my own expectations for in-flight service are minimal. By contrast, if I were paying through the nose for Signature Service, I would expect Signature Service.
