If I need or want to get up anyways, sure I’ll walk to the galley and ask for something at the same time. And if I happen to see an FA walking past just as I want something I’ll flag them down.

But otherwise the call button is used to get the service I am paying for, especially if I’m already comfy in my expensive seat. It is no different than being at a restaurant and calling your server IMO.

Yes, AC’s responsiveness can be hit and miss, but they generally still respond.
