The Courtyard in Sha-Tin. Downside: there's not much to do near the hotel. There's an MTR station a few blocks away but it's a bit of a haul to Central.

The hotel is very nice. I'm Bonvoy Titanium so I got the included breakfast which is quite the spread, and access to the lounge at the top floor which has good snacks and a bit of a view.
