Many North Americans don't like Chinese food in Paris because they are not at all used to it. Most of the immigrants to North America came from southern China (Canton, etc.) while the Chinese immigrants came to France from northern China (Shanghai). The two styles of cuisine are totally different, and even when something is on the menu from the other region, it is not necessarily made 'correctly,' a bit like ordering Boston clam chowder in Texas or Louisiana shrimp gumbo in Montana.
