Couple of questions:

1. I understand the (lack of) logic to flight costs, but I assume there's no way around the fact I'll need to fly to/back from Oslo to benefit from this fare?

2. Is there any issue purchasing the flight in Norweigian currency which is what the Singapore website seems to default to (assume set from the first country you fly from).
I don't really care, but want to make sure they won't mind that we're not Norweigian residents

Then the only choice is do I pick the 380 or 777 as both legs appear to run both planes at various times.

On point 1 - I'm surprised there's no direct SIN -> OSL. If it's going via LHR then you could skip the last leg *if* you travel hand baggage only, but this is against the fare conditions. Irregular ops might have you flying to OSL rather than LHR also and you'd be stuck with this. Read up on hidden city ticketing. Realistically if you're playing the ex-EU game then you should ensure you complete all legs, especially if you want to collect the miles for the flights,

No issue with point 2. Use a credit card that has free FX though.

For what it's worth, I fly annually from LHR to MEL to visit family. I fly on SQ - LHR -> SIN -> MEL, usually in premium economy (decent price v performance ratio for me), upgrading to J where I can for either cash or SQ / Amex miles. Given I leave my wife and nearly 2 year old daughter at home, I don't bother with ex-EU tickets and only go for a week in total including travel times. If you want to look at ex-EU then I'd also consider looking at Qatar, at least pre Covid they had some great fares from the Nordic countries.
