Buying things on the card is definitely a good way to meet the minimum spend requirement. Whether this is a good thing to buy is a different question. You won't get the trip insurance benefits of your card on a trip that you buy with gift cards. And refunds may end up being a hassle (definitely, keep track of the gift card numbers until after you have flown. A spreadsheet is probably a good idea).

I'm going to guess that there are other stored value cards that are less of a hassle.
